Healthy “ish” Omelet

I’m sorry but egg white omelets just don’t do it for me. I am cutting my calorie intake, so I’ve come up with this bad boy that still has some flavor and is way less on the calorie intake. In fact, there are approximately 285 calories in this omelet, and it always keeps me full until lunch!

Healthy “ish” Omelet

What you’ll need:

  • 1/3 cup egg whites
  • 1 whole egg
  • 1/4 cup of pico de gallo or rotel
  • 4 Tablespoons of grated cheese
  • Salt
  • Pepper
  • Green onions for garnish
  • Non stick oil

Step by step:

Start with mixing everything but the cheese and green onions in a small bowl.

Heat a medium pan over medium high heat. Spray the pan with non stick oil. Once the pan is hot, pour whisked mixture into the pan.

Once the liquid is cooked, go ahead and add the cheese to one side, let it melt for about a minute and then flip one side on top of the other to close the omelet. Place on a plate for serving and garnish with green onion.
