I have the most beautiful cabbage this year in my garden. I don’t know if it’s because of the cooler spring we’ve had or the fact that I really kinda left it alone after my fall tomatoes died – 😂 whatever the reason, I needed to use it for something amazing. My husband detests cabbage unless it’s fried in an egg roll; so, I shared this one with my mother in law, who is in an assisted living facility, and myself. I’m 1/2 Polish, so I grew up on cabbage rolls – it was at least a monthly meal. I hope you enjoy this. It’s fast so you can do this on a weeknight!


What you will need:
- 2 pounds of ground beef or turkey
- 1 onion chopped
- 1 head of cabbage, chopped
- 1 can of diced tomatoes
- 1 can of tomato sauce
- 1 cup of rice
- 4 cups of chicken broth
- 1 Tablespoon of herbes de Provence
- Salt
- Pepper
Step by step:
Heat over medium high a dutch oven or heavy pot and add meat and onions. Brown. Add a few teaspoons of salt and a tsp of pepper and a Tablespoon of herbes de Provence to the mixture as it browns.

Add everything else once the meat is browned.

Bring to a boil then reduce heat to low and cover. Simmer for 20 minutes or until rice is tender. Give it a taste after 20 minutes and see if you need to add more salt. Serve and Enjoy!
